Eating a plant-based diet is not only great for you, it is also a better choice for the planet. Livestock accounts for about 15% of global carbon dioxide emissions (and that doesn't even count meat processing, packing, and transport to the consumer). In order to cut these emissions, we must work to reduce consumer demand for meat and dairy. I know, I know, life without cheese sounds TERRIBLE. But, after discovering The Purple Carrot, a plant-based meal delivery service, I am finding that a vegan lifestyle is much more delicious and attainable than I initially imagined.
The Purple Carrot, a Needham-based startup, delivers ingredients and a recipe card to make two meals (each serves 4) and one snack, all for $59. Yep, that means, if you are cooking just for yourself, you'll get 8 meals and 4 snacks out of each delivery!
And the recipes are AMAZING. So far, I've tried the following:
- Lemon asparagus risotto
- Kale and rhubarb salad with candied hazelnuts and lemon vinaigrette
- Mushroom marsala with grilled asparagus and roasted pine nuts
- Mushroom and sweet potato tacos with mango salsa
Just to be clear, I am an amature cook and all of these dishes came out perfectly and tasted amazing. I totally forgot that they were meat and dairy free!!
Oh, and next week I'll be making:
- Plantain tostadas and chimichurri sauce
- Moroccan vegetable tagine with couscous
